Sophie is currently working on the Apple Breeding Project, where she is responsible for the planting, pruning and maintenance of apple trees. Sophie assists with the creation of new apple varieties through grafting, budding and pollination.  She also undertakes the assessment of fruit, both pre and post harvest, including storage.
